Story time..

A blue-eyed, short haired man stroked his stubble as he pondered where life would take him.He stood in his office, the top button of his shirt undone, and a name badge pinned to his left breast. ‘KELVIN SNAITH’.


His published book '5000 hours in therapy' sits proudly on the window sill. - A reminder of his 5000+ hours served in the NHS.


He has been a cognitive behavioural therapist for quite some years now. Who would’ve thought his early years as a personal trainer would’ve led him here?

AND JUST LIKE THAT, KELVIN HOPPED IN A TAXI, BOARDED A PLANE AND WAS READY TO START HIS ADVENTURE IN THE ONE PLACE HE HAD DREAMED OF… ASIA.


A FEW WEEKS HAD PASSED, AND IT WASN’T LONG BEFORE CULTURE HAD SPREAD THROUGH EVERY ASPECT OF HIS BEING. THE SPIRITUAL & ALTERNATIVE PRACTICES THAT SURROUNDED HIM INTRIGUED HIS MIND. WHY DO YOU EAT ORGANIC FOOD AND WHY IS IMPORTANT?

I EAT ORGANIC FOOD BECAUSE I WANT TO MINIMISE THE AMOUNT OF PESTICIDES I CONSUME. PESTICIDES ARE KNOWN CARCINOGENS AND HAVE BEEN LINKED TO MANY HEALTH PROBLEMS, SO I THINK IT’S REALLY IMPORTANT WE DO WHAT WE CAN TO MINIMISE CONSUMPTION OF THEM. 


I ALSO EAT ORGANIC BECAUSE I BELIEVE IT’S THE HEALTHIEST THING WE CAN DO FOR OUR PLANET.

WHAT DO YOU THINK ABOUT FROZEN MEALS?

FREEZING IS A HEALTHY AND CONVENIENT WAY TO PRESERVE FOOD WITHOUT THE NEED FOR TOXIC/HARMFUL PRESERVATIVES. I THINK IT IS A GREAT WAY TO GET SKIM’S NOURISHING MEALS TO PEOPLE ALL OVER THE U.K. OF COURSE, I RECOMMEND CONSUMING SOME FRESH AND FERMENTED FOOD EVERY DAY TOO. 



WHy Skim?

SKIM MEALS ARE 100% ORGANIC WHICH FOR ME IS VERY IMPORTANT. THEY USE GOOD COOKING OILS, UNREFINED SALT, PAPER PACKAGING AND HAVE COMMITTED TO HELPING WITH RECYCLING OF PLASTIC WASTE, ALL OF WHICH ARE IMPORTANT TO ME. I PREFER TO EAT MOSTLY VEGGIE /VEGAN FOOD. THEY DELIVER ALL OVER THE U.K. SKIM THEREFORE TICKS ALL MY BOXES. I LOVE TO SUPPORT BUSINESSES HAVING A POSITIVE IMPACT ON PEOPLE’S HEALTH AND THE PLANET. 

WHAT IS YOUR FAVOURITE SKIM MEAL? 

I LOVE TO TASTE FLAVOURS FROM ALL OVER THE WORLD AND SO IT IS VERY DIFFICULT TO CHOOSE JUST ONE MEAL. I LOVE ALL SKIM MEALS BUT IF I HAD TO CHOOSE ONE IT WOULD BE THE LENTIL AND SPINACH CURRY BECAUSE I LOVE LENTILS, SPINACH AND SPICE. 

WHAT’S YOUR FAVOURITE FOOD DESTINATION? 

BALI! I LIVED THERE FOR SEVERAL MONTHS AND NOWHERE IN THE WORLD HAS COME CLOSE TO THIS FOODIE HAVEN! THERE IS LITERALLY HUNDREDS OF AMAZING ORGANIC/HEALTHY FOOD CAFES/RESTAURANTS TO CHOOSE FROM. THEY ALSO LOVE SPICY FOOD AS I DO. I OFTEN REMINISCE OVER MY DELICIOUS BALI FOOD EXPERIENCES. ALTHOUGH THEY ARE A DEVELOPING COUNTRY COMPARED TO THE U.K, I THINK THEY ARE YEARS AHEAD IN TERMS OF HEALTHY FOOD CULTURE. 

WHAT’S YOUR FAVOURITE CUISINE?

I LIKE TO TASTE FLAVOURS FROM ALL OVER THE WORLD AND SO IT IS REALLY DIFFICULT TO PICK ONE! I DO LOVE SPICY FOOD THOUGH AND SO IF I WAS PUSHED TO PICK ONE, I’D SAY INDIAN OR INDONESIAN.

DO YOU HAVE A FAVOURITE INGREDIENT?

COCONUT. IN BALI IT WAS EASY TO GET HOLD OF FRESHLY PRESSED COCONUT MILK. IT’S SO DELICIOUS AND I OFTEN WOULD MAKE OAT /QUINOA PORRIDGE WITH IT AND ALL MY FAVOURITE TROPICAL FRUITS. I WAS IN HEAVEN EVERY MORNING! THERE ARE SO MANY HEALTH BENEFITS TO COCONUT ALSO, TOO MANY TO LIST HERE!

WHICH INGREDIENT DO YOU LOATHE/THINK IS OVERRATED?

MARGARINE! WE WERE LIED TO, MARGARINE IS ONE OF THE UNHEALTHIEST THINGS WE CAN CONSUME AND IS ONLY GOOD FOR THE GARBAGE BIN!

WHAT’S THE STRANGEST DISH YOU’VE EVER TRIED?

I ONCE ATE CHILLI CHOCOLATE COVERED GIANT ANTS! 😬 IT WAS A JOKE CHRISTMAS PRESENT FROM A FRIEND BUT IN THE INTEREST OF SCIENCE I THOUGHT I’D GIVE IT A TRY. IT WASN’T SO BAD.

IF YOU HAD TO EAT ONE MEAL FOR THE REST OF YOUR LIFE, WHAT WOULD IT BE?

THIS ONE IS SO DIFFICULT FOR ME BECAUSE AS I ALREADY MENTIONED, I LOVE TO TASTE CUISINE/FLAVOURS FROM ALL OVER THE WORLD AND SO I WOULDN’T LIKE TO EAT JUST ONE FOR THE REST OF MY LIFE. IF I WAS PUSHED TO PICK ONE, I’D HAVE TO SAY GIGANTES PLAKI (THE GREEK DISH). I NEVER SEEMED TO TIRE OF THE TEXTURE/FLAVOUR OF THIS DISH WHEN I LIVED IN GREECE FOR SOME MONTHS. I LOVED TO EAT IT MANY DAYS OF THE WEEK WITH SEEDED SOURDOUGH BREAD OR RAW CRACKERS.

WHAT KIND OF OIL/FAT DO YOU USE MOST OF ALL?

I ALWAYS USE COCONUT OIL FOR COOKING AND FOR SPREADING ON THINGS. I LOVE EXTRA VIRGIN OLIVE OIL TOO AS A DRESSING OIL ON SALADS / VEGETABLES.

WHAT IS YOUR FAVOURITE CONDIMENT? 

Spicy sauerkraut. I think it’s so important to consume some fermented/living food each day (yoghurt / kombucha / sauerkraut / beet kvas / kefir ) to help maintain healthy gut bacteria and bacterial balance in the body. This is our first line of defence & best protection against viruses and other harmful pathogens. It also aids digestion. 

WHAT’S YOUR FAVOURITE COMFORT FOOD?

HAS TO BE PIZZA! I’LL ALWAYS TRY TO FIND THE BEST QUALITY PIZZA PLACE WHEREVER I AM.

WHAT IS YOUR FAVOURITE FOOD MEMORY FROM CHILDHOOD?

MY MUM USED TO MAKE THE BEST TIFFIN - A SWEET DESERT /SNACK. I REMEMBER ME AND MY BROTHER WOULD CONSTANTLY BEG HER TO MAKE SOME. I WISH I COULD REMEMBER THE EXACT RECIPE (SADLY MY MUM CAN’T REMEMBER IT NOW), BUT I RECALL DELICIOUS FLAVOURS OF RAISINS, CHOCOLATE AND CONDENSED MILK. I RECENTLY READ ABOUT A VEGAN VERSION USING CONDENSED COCONUT MILK WHICH I’D LOVE TO TRY. NOT THE HEALTHIEST I KNOW, BUT IT’S A FOOD MEMORY THAT STICKS.
